The Impressionists (at the Saint-Siméon Farm)

Since the arrival of chef Jacques Maximin, and his executive Matthieu Pouleur, the gastronomic restaurant Ferme Saint-Siméon has held its own.

To better understand the beauty of its Norman architecture, typical of a 17th century farm, with its slate walls, half-timbering and thatched roofs, a short tour of the chapel of Notre-Dame-de-Grâce, which overlooks it, is necessary. The Saint-Siméon Farm, at the gates of Honfleur, has kept the authentic character of the inn it once was, when the great impressionist painters came to stay there to take advantage of the breathtaking view of the Seine estuary and the bay of Le Havre. Inside, the floor tiles, the thick beams and the fireplaces are still there to remind the peaceful atmosphere of the inn.

Located on the first floor of the main building, the restaurant The Impressionists also offers a clear view of the estuary. This gastronomist, who has had a career that is as remarkable as it is eventful, has chosen reason by favoring, once and for all, the sure values of a traditional, authentic and high-flying cuisine, capable of freeing itself from excesses of creativity in order to better serve the product – and this, at L’Honoré, we particularly like. For this, the establishment called upon the great chef and Meilleur Ouvrier de France Jacques Maximin, whose CV is enough to make anyone jealous. It was his mission to give the restaurant an identity of its own that would suit the spirit of the place. Which he has wonderfully accomplished, with the help of his executive chef Sébastien Faramond, replaced since summer 2019 by Matthieu Pouleur.

At the helm of the brigade, this young chef brilliantly executes a very beautiful menu that gives pride of place to high quality local products. The concern for excellence is obvious. The signature five-course Marine Impressions menu is a fitting tribute to the Farm’s marine environment. In the spring, the carpaccio of langoustine with peas and mint was an example of freshness and balance, in perfect harmony with the establishment which, although it does not have a star, is one of those institutions capable of seducing, against the current of trends, by a concern for excellence and authenticity which is not commonplace
