The three-starred chef Arnaud Lallement excels at it.  <\/h3>\n\n<h4 id=\"by-romain-riviere\">By Romain Rivi\u00e8re<\/h4>\n\n<p>Established not far from Reims since 1986, the family house, created in 1975, is one of those rare institutions where the concern for excellence can be felt even before entering the dining room: this generosity and authenticity in the welcome, the signature of a house that has kept the family soul instilled in it by the Lallement family, announces a gastronomic experience out of time. Jean-Pierre Lallement, the founder, passed away in 2002 but his wife, Colette, still watches over his house, which is now run by his son, the three-star chef Arnaud Lallement, and his daughter M\u00e9lanie, who runs the hotel.<\/p>\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" loading=\"lazy\" width=\"732\" height=\"543\" src=\"https:\/\/lhonoremagazine.com\/wp-content\/uploads\/2019\/11\/12567_plat2_1.jpg\" alt=\"\" class=\"wp-image-897\" srcset=\"https:\/\/lhonoremagazine.com\/wp-content\/uploads\/2019\/11\/12567_plat2_1.jpg 732w, https:\/\/lhonoremagazine.com\/wp-content\/uploads\/2019\/11\/12567_plat2_1-320x237.jpg 320w, https:\/\/lhonoremagazine.com\/wp-content\/uploads\/2019\/11\/12567_plat2_1-560x415.jpg 560w\" sizes=\"(max-width: 732px) 100vw, 732px\" \/><\/figure>\n<p>The Assiette Champenoise is a wonderful embodiment of the quintessence of Champagne. Arnaud Lallement has built the identity of his cuisine in resonance with the best that Champagne has to offer through its terroirs and, of course, its wines. A tasting menu with exclusive champagne pairings is a wonderful experience, naturally allowing you to discover beautiful confidential houses (Charton Taillet, R. Pouillon, A.
