With the concern to operate a precise work of selection and assembly of Languedoc terroirs with different tonalities. The 2018 Beillou, which is part of the S\u00e9lection Parcellaire range, is an atypical wine: this Carignan, in fact, is vinified on its own, something rare for a demanding grape variety. From century-old vines that flourish in clay soil, the grapes are hand-picked and half are vinified as whole bunches in wooden vats.
